Anti-Inflammatory Recipe of the Week

In September of 2015, I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

You guys, I love soup.  And, my absolute favorite one to make AND EAT is this one.  It is called the Melis Family Minestrone Soup and it can be found on the Today Show website.  The only thing that I omit is the cheese at the end.  It is so hearty and filling and chocked full of awesome veggies!  Mmmmmm!

What is your favorite soup to eat when the weather is turning cooler outside?  

Now, go forth, and eat great food.  Your dietary limitations should not limit you from enjoying great food.
