Anti-Inflammatory Recipe of the Week

In September of 2015 I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

No-Bake Chocolate Peanut Butter Quinoa Cookies 

Seriously!  No-Bake AND Chocolate Peanut Butter - yes, please, and thank you!

My Daily Declarations lays it out for you.  The quinoa makes these suckers chewy and adds a little more protein on top of what the peanut butter brings to this recipe in addition to fiber.  People, FIBER is important to your diet and we are not consuming enough of it.  I'm not talking about drinking that foul colored stuff, I'm talking plant based fiber.  You need it in your diet!  It's vital.

Now, go forth, and eat great food.  Your dietary limitations should not limit you from enjoying great food.
