Anti-Inflammatory Recipe of the Week

In September of 2015 I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

Gluten Free Spiced Hot Fruit Bake

Oh yes, you read that correctly.  And, it's amazing.  

Cotter Crunch suggests using it as a topping to pancakes or waffles.  To be honest, I eat this with my steel cut oats and it's oh so good!  I also eat it all by itself.  Seriously, it's that good!


You can find the recipe here.  Here are some of the modifications that I made to this recipe so that it's safe for me to eat - I used a 1/4 cup of coconut sugar, honey, omitted the butter altogether and doubled the coconut oil (you may need to add a little more, melted, to get the right consistency with the spices and sugar), then I greased the casserole dish really well with spray olive oil.  

Now, go forth, and eat great food.  Your dietary limitations should not limit you from enjoying great food.
