Anti-Inflammatory Recipe of the Week

In September of 2015 I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

Like I shared last week, I eat A LOT of Mexican food.  Mexican restaurants are safe places for me to eat and to enjoy a meal out with my family or as a date night with my husband.  

I absolutely love this recipe from Veggie Inspired.  I can make it as a side for my husband and boys and use it as my main course because it has all of the good things in it.

Protein
Fiber
Veggies

...and FLAVOR

Let me tell you, it's the roasted chickpeas that make this recipe.  So, so good.
