Listen to Your Mother {Chicago}

I am not in the show this year.  According to Melisa Wells (co-producer of the Chicago show), I maxed out in 2015.  And, this year, it's the grand finale show.

But...I had so many more stories to share.

For me, Listen to You Mother {Chicago} has, is, and will continue to be a safe place for me. The place where I was coming from in 2012 when I auditioned for the first time was not good, healthy, supportive, or thriving.  I was not allowing myself to hold space.  I didn't think that what I had to say or share was important or would have an impact, at all.  What being apart of Listen to Your Mother {Chicago} allowed me to do was want to have that space.  Participating in the whole show process (audition, rehearsal, bonding via a Facebook group, performing, and then becoming an alumni), allowed me to want the creative spark that I was constantly pushing to the side because I didn't feel like I even deserved to have a creative spark because I was a mother, because I was a wife, because I was a stay-at-home mom, because....
Being apart of Listen to Your Mother {Chicago} gave me the desire to not only want, but to do.  And it was glorious.  At a time where I felt the most isolated and alone, I suddenly didn't.  I grabbed so tight onto what was right in front of me and haven't let go for six year.  I have been singing the praises of Listen to Your Mother {Chicago} that entire time.  Desire and doing is so magical when you allow it to take over, and when you know what the catalyst was for that, why wouldn't you sign those praises loud and far?  For me, it's deeply rooted in gratitude.

As someone who has sat in the seats of the Athenaeum Theater in Chicago three times with wide eyes, whole hand covered gasps, and fists of tissues, I can tell you that it is an amazing experience.  It is the only thing that I have ever participated in where I have walked away not only with a mind full of "me too's", but also inspired and encouraged.

So, here I am singing the praises of Listen to Your Mother {Chicago} in the hopes that the theater will be filled for its grand finale performance.  Because it should be.  Because you should be there. Because it makes a great girls day out.  Because it makes a great Mother's Day gift.  Because you should go with friends & family and enjoy a performance about motherhood - about every aspect of motherhood.

Tracey Becker and Melisa Wells (co-producers of Listen to Your Mother {Chicago}), allowed me the ability to share what it was like to be the mother of a child with a biological father who was not there, in 2012




Having never, EVER been on stage (short of a college Poetry class assignment) I freaked out.  This is my post show blog post.   I literally could not walk out on stage as Stephanie Kush.
I was that terrified.  So, I donned an alter ego and did my very first LTYM performance not as myself. So, being on the other side of that I am strongly against that but I oh so get it!  I shared more about my piece here, too.

They gifted me the ability to come back in 2015 to share about what I learned from my mom, who at the time was dying of cancer



By this point I was so comfortable in my own skin that I was able to set foot on stage as myself.  I shared about participating in LTYM in 2015 here, the evolution of my freak out (2012 vs. 2015) here , because hindsight is always 20/20, and about my 2015 performance after my mom's death here.

What had happened between 2012 and 2015 that allowed me to be so comfortable in my skin?  Listen to Your Mother.  Every single aspect of it.  The fact that this is their grand finale performance saddens me because no one else will be able to experience that.  Here is the thing, when you go from a place of lack and negativity to a place of abundance and support, you change.  You have to!  I have, and I'm so grateful that I did.

Gluten Free & Allergen Friendly Expo RECAP

I attended the GFAF Expo as a Blogger. I was offered a giveaway for my blog.  All opinions are mine. {sponsored}


I attended the Gluten Free & Allergen Friendly Expo, for the second time, this past weekend as an Official Blogger.  Here is my recap of the expo. 



BFree Foods hosted the bloggers who were in attendance.  People, I haven't had a bagel in 2 years. Not only did I have a bagel, but I enjoyed the bagel.  So much so that I have been to two local Jewel stores with no success in finding and purchasing BFree bagels.  I'm on a mission, though.  I will find those bagels and I will enjoy them!  Do you know how hard it is to find gluten free bread that doesn't crumble or taste like a hockey puck?  These folks at BFree are changing how GF bread can be enjoyed.

Not only are all of our products gluten free, but they are also wheat, dairy, egg, nut and soy free, making them free from all major allergens and suitable for vegans! Sometimes people that suffer from an intolerance to one food group are also prone to suffer an intolerance to another.

After I enjoyed a very nice breakfast of amazing bagels and fresh fruit, I was allowed to wander the expo floor prior to it opening to the public.  SCORE!  

Fresh Thyme had an amazing display and some great offerings for samples.  






I met these two amazing guys from Ona Treats and got to sample their maple bar.  Sweet peas, people!  It was SO GOOD.  How good, I bought three.  Simple ingredients and a great tasting bar! I'll be on the lookout for more.  




I then moved on to the Bob's Red Mill table and pretty much made a fool of myself fan-girling on the people running the both.  Whatever, when you love a product you let their people know!  
Here is a photo of what my pantry is currently filled with by them (walking the walk, not just talking the talk).  Also, fingers crossed on winning some of their product.


I then found the Daiya booth.  People, PEOPLE!  I have been using their shredded cheese for roughly 6 months.  It's a new find for me. I got to sample their pepperoni pizza - woah!  Now, if you have ever tried any gluten free pizzas you know that they often times resemble cardboard.  Oh, not this stuff!  It's soy free, gluten free, dairy free and plant based!  

"The humble pizza goes gourmet and crave-worthy. Welcome to the first ever plant-based, soy-free, gluten-free meatless pepperoni pizza. Frozen for convenience. You’ll love the zesty tomato sauce and artisan crust. The meatless pepperoni is made with Daiya’s own special blend of mushroom and pea protein crumbles. I was told to cook the pizza just a little longer than instructed as it will get a nice crispy crust.  *noted*

I also sampled their Greek Yogurt alternative.  I may have shed a tear.  Do you know what dairy free yogurt is like?  It's runny and lacks any consistency to yogurt. This stuff, GOLDEN!  So much so that when I went shopping at my local Mariano's and noticed they did not stock their yogurt (they do stock their cheese), I requested for them to stock it.  It was amazing, and I'm looking forward to being able to purchase some soon.


Gluten free, soy free & dairy free = safe to enjoy.  And, enjoy I will.  

I then stopped by the SunButter booth prior to going to the first workshop.  Their nut free alternative is really good.

I then made my way to the first workshop.  My goal this year was to attend every workshop, and I did!  



First up was Dr. Heather Wisniewski.  She shared on the advances in diagnosing gluten intolerance. I was shocked to learn that current testing (such as Genova, which is the test my son had done) only tests 8 of the 18 gluten proteins.  So, you can test false negative to a gluten intolerance and actually have one.  She recommended the test that is run through Cyrex Laboratories.  Just putting it out there should anyone be looking for information.  



After the first workshop I headed back down to the expo floor where things were picking up.  There were thousands of people there.  THOUSANDS!  

I won an awesome Udi's shirt at the Udi's booth.  Udi's was the very first gluten free product that I purchased after finding out my son's intolerance to it.  A lovely Whole Foods employee found me crying in one of their aisles as I was looking for a birthday cake alternative and turned me on the Udi's.  My son has already tried stealing my shirt from me.  Not happening, kid.     



I then attended the second workshop by Dr.Peter Green.  His was quite interesting as he explained the pitfalls of a gluten free diet and cautioned attendees on the current anti-science movement, and to beware of pseudoscience, profit makers and the dietary supplement industry.  Though I felt that his presentation went against the purpose of the GFAF Expo, I did find it very informative as I do know some people who are gluten free because it's a fad or are trying to loose weight by eliminating gluten as opposed to being gluten intolerant. He is a doctor at the Celiac Disease Center at CUMC.



I then headed back down to the expo floor as I was informed by Enjoy Life via Twitter that I could in fact go through their super fun booth, that it was not just for kids (which is what I falsely assumed). 


 

I first learned about Enjoy Life and their chocolate chips at last years expo.  They have been a game changer for me when it comes to baking for my son.

Here is the thing, my son has a casein sensitivity, not just a dairy one.  So, finding safe alternatives is often extra tricky.  Not with Enjoy Life though.  


Additionally, I may now be addicted to these, and I'm kind of okay with that. 



I then made my way back upstairs for the third workshop which was presented by Kim Koeller on allergen friendly eating while traveling with the Gluten Free Allergy Free Passport. Very informative. She also stressed something that I live by and that is always travel prepared.  Plan to take foods that are safe for you while traveling because often times you may not be able to find safe foods.  


I returned to the expo floor again and made a pastagram


Ronzoni Gluten Free pasta is solid. I won a box of spaghetti noodles at the expo and was given coupons for free product and was able to obtain a pene and macaroni noodle as well.      

If you couldn't tell by now, I was having a lot of fun at the expo.  

I then made another lap through the expo floor and found Path of Life Foods and got to sample their kale and butternut squash vegetable side.  So, SO good!  I found some at my local Jewel (FYI).  
I also stopped by Sweet Ali's table and bought cookies for the boys.  They all enjoyed them, by the way.


I then went to attend the final workshop.  It was full.  Every chair was taken and there were people standing.  And, it was the workshop that I was most interested in given that I have Endometriosis.  Tiffany Hinton shared her story and gave some great tips on dealing with inflammation.  Most I am already doing, but I did get some take-aways to try, which I'm super excited about.


People, I opened and closed the Gluten Free & Allergen Friendly Expo in Schaumburg - it was awesome!  I encourage anyone with food allergies, sensitivities or intolerance's to attend.  You will be able to connect with companies and brands, sample food and walk out more informed.   That was super important for me.  I am looking forward to returning next year and seeing how the face of gluten free and allergen friendly food has changed, again.  Now I'm off to hunt down some BFree bagels!

CBD {Transdermal Patch}

There are many rungs on my Healthy Living Ladder - MANY RUNGS.

The use of CBD is just another one of those rungs on my Healthy Living Ladder that I have found exceptionally helpful for me.  That's the key, it works for me.  I don't know if it'll work for you.  But, I'll give you the information that I have and you can make that decision.

In addition to using 250mg CBD with a dosing of 1.0ml I use a CBD Transdermal Patch when traveling and when I am about to enter what I consider to be a potential high stress situation for me (an example of this would be a large family gathering).

Why?

  1. Because I do not travel well.  
  2. Because I do not like large crowds and family can often times be tricky.    
I use the Mary's Nutritional Patch which has 10mg of hemp extract (aka cbd).  I typically place it on the veiny part of my arm by my wrist.  I've only had to use this patch four times in the past year. As I was leaving for a road trip to Texas (on the first day), that return trip from Texas (on the first day), on Thanksgiving, and on Christmas Day.  I have one patch on reserve and will be ordering another five within the next few weeks to stock up again.  I have not experienced pain from my endometriosis so severely that I needed to use the patch, though.    

I take my normal dosage of CBD tincture, apply the patch after I've cleaned my skin with rubbing alcohol, and I find that whatever anxiety or stress that I had prior to that just melts away.  I'm easier to deal with and I deal the the situation at hand better.     
    
I find that the patch is very effective for me up to 8 hours and I consider it a nice buffer dose for me.   I have found, in general, my routine and regular use of CBD has increased my quality of life on a daily basis.  Mentally and emotionally, I am better.  I am not anxious or stressed, which prior to starting the use of CBD would often times result in my taking that anxiousness or stress out on my family.  Not the case anymore.  Also, I am sleeping better.  Often times, though, I find that my regular and routine use of CBD just needs a small added increase to handle situations that in the past seemed to incapacitate me (such as large gatherings or family).  I view my use of CBD as how I'm able to lead a happy, joyous and free life.  I'm much happier.  It's amazing.  It's been a total game changer for me.

Anti-Inflammatory Recipe of the Week

In September of 2015 I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

Like I shared last week, I eat A LOT of Mexican food.  Mexican restaurants are safe places for me to eat and to enjoy a meal out with my family or as a date night with my husband.  

I absolutely love this recipe from Veggie Inspired.  I can make it as a side for my husband and boys and use it as my main course because it has all of the good things in it.

DIY Tip of the Week {Chemical Free Home}

What's in your cabinets?   

Why am I passionate about getting the yuck out of my home?  Because I don't want to be in constant pain because my Endo is flaring up.  I know, it's pretty selfish, but it's the catalyst for change in my home.  For me, essential oils are another rug on my Healthy Living Ladder.  It's something that I'm choosing to do to help my family.

Did you know that 26 seconds after exposure that chemicals are found in measurable amounts in the human body?    

Did you know that the National Institute of Occupational Safety and Health studied 2,983 ingredients in our products at home—and found 884 toxic ingredients? 

Vent Diffuser!  Yep, you read that correctly - vent diffuser.  And, it's super easy to make.  I use this in my mini-van, but it can be used in your home as well (you know, if you want to pop off your vent covers).  

First, you are going to want to pick up some wooden clothes pins.  

Next, choose your favorite essential oil.  Personally, I like to be as calm as possible when I'm driving so I like using Stress Away®.  
Pinch open the clothes pin and put a few drops on each side.  Make sure that it's saturated, if you need to, use your finger to rub the oil in.  
Lastly, clip on to you vent slat.  
And, TA-DA - and totally cheap DIY vent diffuer that you can use until you can purchase one that works in your car's outlet.

This week I'm going to share about Purification® Essential Oil.  It's known as the "Neutralizer".

 
Purification® Essential Oil - Cymbopogon nardus (Citronella) oil, Rosmarinus officinalis (Rosemary) leaf oil, Cymbopogon flexuosus (Lemongrass) oil, Melaleuca alternifolia (Tee tree) leaf oil, Lavandula hybrida (Lavandin) oil, Myrtus communis (Myrtle) oil
  • Add to your diffuser to get the funk out (great if you have pets)
  • Put a few drops on a cotton ball and place in your stinky shoes overnight
  • Aids in insect bites
  • Cat and dog ear mites

DIY Recipe - Room Freshener Spray
  • 1 cup distilled water
  • 1/2 cup witch hazel with alcohol
  • 1 teaspoon baking soda
  • 6 drops of Purification® Essential Oil
  • 4 drops of Lavender Essential Oil

  1. Pour water and witch hazel into a spray bottle
  2. Put baking soda in a small bowl, add to it the Purification® Essential Oil and Lavendar Essential Oil, and mix well
  3. Add the baking soda and essential oil mixture to the spray bottle
  4. Gently swirl the mixture together

CBD {Salve}

There are many rungs on my Healthy Living Ladder - MANY RUNGS.

In addition to using 250mg CBD with a dosing of 1.0ml I use CBD salve.  The salve that I use is 400mg per 2oz. jar.  I don't use the salve that often, but when I do it's very effective.

Why do I use salve?  This was actually the second item that I purchased from Hemp Life Today.  I got it to help with knee pain that was cropping up (I suffered a partial tear to my meniscus and other damage to my left knee in January of 2014), sciatica issues that I was experiencing, and to help manage my acne.  I've also used it to help relieve dry winter skin as well cracked heals on my feet and to manage a cold sore (and it worked!).  I do not use it on a daily basis, just as needed to help with either targeted pain, with acne breakouts or skin inflammation.  


I choose to use CBD salve from Hemp Life Today.  I did a lot of research prior to purchasing from Hemp Life Today and I feel confident in them as a company and in their products.

I eat a lot of Mexican food.

A.LOT.

It's a safe place for me when we go out to eat as a family.  But, you know what?  I can only eat so many fish tacos before I kind of have my fill of them.  Enter cauliflower tacos.  

There is a little taco joint within walking distance of our home that makes an amazing cauliflower taco.  AMAZING!  So, I looked for a way to replicate it at home.  

Brand New Vegan nailed it!  His recipe for Amazing Cauliflower Tacos lives up to the amazing part in my books.  Oh, but not every recipe I have stored in my Anti-Inflammatory Pinterest rolodex is "safe" for me.  This one needed one slight modification - soy sauce.  It's a no-no for me.  First, lets look at the reason for the use of soy sauce; it's typically used to add salt and color.  To the rescue?  Balsamic vinegar and just a wee increase to the salt in the recipe - TA-DA!  Also, cauliflower rice - you may be able to purchase this in a package in your produce section.  I found mine at Aldi.  And, if Aldi has it, I'm sure some larger chains carry it as well.  Oh, and since flour is on the do not consume list for me I choose to use corn shells for my tacos.  But you do you!

DIY Recipe of the Week {Chemical Free Home}

Did you know that 26 seconds after exposure that chemicals are found in measurable amounts in the human body?    

Did you know that the National Institute of Occupational Safety and Health studied 2,983 ingredients in our products at home—and found 884 toxic ingredients? 

Foaming hand soap, people.  Here is where I let you in on my frugal "squeezing blood from a turnip" style recycling - reuse the store bought foaming hand soap bottle and pump.  I'm serious.  You can order them on-line, and you may be able to pick them up at the store (I think), you can even go fancy and get a really nice glass one with a neat finished pump...or, just reuse the one you have that contained the store bought concoction.

Ok, here is the recipe (it's super simple)


  • 12 ounces of distilled water
  • 2 Tbs of Dr. Bronner's Liquid Castille Soap (I use the unscented one, but I hear that the peppermint is pretty super)
  • 1/2 teaspoon of liquid oil (I use jojoba, it's what I have on hand.  But, you can use olive oil or sweet almond oil)
  • 10 drops of the essential oil of your choice (I like Citrus Fresh™ by Young Living or Thieves™ by Young Living)
Directions:

  1. Fill the soap dispenser with distilled water leaving enough room for the foaming pump, roughly 2 inches from the top.  
  2. Add 2Tbs of Dr. Bronner's Liquid Castille Soap
  3. Add 1/2 teaspoon of liquid oil
  4. Add 10 drops of essential oil of your choice
  5. Tighten lid and swirl contents
  6. Have a little more room at the top of the container?  Add a little more distilled water

This week I am moving on to another oil in the Young Living™ Premium Starter Kit - Frankincense Essential Oil.  This oil is knows as the "King of Oils".

 
Frankincense Essential Oil - Boswellia carterii (Frankincense) oil
  • Elevate your spiritual experience by diffusing a few drops while in prayer or meditation
  • Can be used for scar and stretch mark management
  • Aids in immune support
  • Promotes a positive mood, relaxation, and a balanced mood

DIY Recipe - Frankincense Face Cream

  • 1/4 cup cocoa butter 
  • 1/8 cup coconut oil 
  • 1 Tbsp jojoba oil 
  • 1 Tbsp sweet almond oil 
  • 20 drops Frankincense essential oil 
  • In a double boiler, melt the cocoa butter
  • Combine melted cocoa butter, coconut oil, jojoba oil, and almond oil in a mixing bowl (if you are going to use your stand mixer to whip the ingredients, use the bowl that comes with that)
  • Place the bowl into your fridge until it hardens
  • Whip using a stand mixer or a hand mixer
  • Scrape and whip several times to get it all well combined
  • Whip until fluffy, then add the Frankincense and whip some more until combined

CBD {Tincture}

There are many rungs on my Healthy Living Ladder - MANY RUNGS.

The use of CBD is just another one of those rungs on my Healthy Living Ladder that I have found exceptionally helpful for me.  That's the key, it works for me.  I don't know if it'll work for you.  But, I'll give you the information that I have and you can make that decision.

One of the main forms of CBD that I choose to use is tincture.  I use a 250mg CBD with a dosing of 10ml.  I take one 10ml dropper full every night under my tongue (sublingually).  When taken this way, the arterial blood supply under your tongue rapidly absorbs the CBD.  The effects typically kick in for me in roughly 30 minutes.  It does have an aftertaste.  

Why do I use tincture?  It was the first form of CBD that I tried and it worked really well in a variety of ways.  When I first started using CBD I would take 3 10ml dosages of the 250mg CBD, daily (broken down to morning, afternoon and evening).  What this allowed me to do was calm down.  I'm an extremely anxious person and I ruminate, a lot.  I wanted to be able to be calm and relaxed.  I have never been calm and relaxed.  The CBD tincture helped with this.  Additionally, it assisted with me getting a solid nights sleep.  Since undergoing chemotherapy last year, one of the side effects that has stuck around is insomnia.  When I take CBD before bed, I sleep better, sounder, and more deeply at night.  I know that this is not a typical effect of CBD use, and I can't explain it, but it works for me. Also, when my Endometriosis pain flares up, it assists with managing that pain without having to turn to NSAIDs.  


I choose to use CBD tincture from Hemp Life Today.  I did a lot of research prior to purchasing from Hemp Life Today and I feel confident in them as a company and in their products.

Anti-Inflammatory Recipe of the Week

In September of 2015 I started Dr. Weil's Anti-Inflammatory Diet after being diagnosed with Stage 4 Endometriosis.  I share a new recipe each week to help those who may need to modify their eating habits to better their health.

I love burgers.  LOVE

Like, my dad created his own burger when I was a kid and named it the Dikkeboom Burger (Dikkeboom is my maiden name).  It has bacon and shredded cheese mixed into the ground beef. They are amazing.

...and, I cannot eat them now.  

But, I do still love a good burger.  I'm just not too keen on purchasing pre-made meatless burgers from the store.  The added ingredients/chemicals to the pre-packaged meatless options still cause me to pause. So, I set off to find a really good meatless burger option that didn't taste disgusting.  And, I found it!  

The reason why I love this recipe from All Recipe (by jeshaka) is because it's easy to make and I can modify it - which I need to do since I am gluten free.  I simply omit the flour altogether and use 3 slices of gluten free bread.  I've also omitted both the flour and bread and used gluten free flour instead.  It all depends on what I have on hand.  I half the chili-garlic sauce for my families taste.  But let me tell you, it's the seafood seasoning that makes this burger awesome!  Also, I just throw everything into my food processor and let it do the work.  Easy, peasy!

DIY Recipe of the Week {Chemical Free Home}

What's in your cabinets?   

Why am I passionate about getting the yuck out of my home?  Because I don't want to be in constant pain because my Endo is flaring up.  I know, it's pretty selfish, but it's the catalyst for change in my home.  For me, essential oils are another rug on my Healthy Living Ladder.  It's something that I'm choosing to do to help my family.

Did you know that the National Institute of Occupational Safety and Health studied 2,983 ingredients in our products at home—and found 884 toxic ingredients? 


This one is pretty simple and works really well.  I like in a rural area where my village provides filtered well water.  Having lived in areas that had well water and city water, to tell you the truth, I can't tell the different between the filtered well water and the city water.  The taste is the same, my clothes are not dingy....BUT, holy hard water stains batman.  And I'm not even talking about the splotchy marks on my shower door. I'm talking about the caked on mineral deposits on my fixtures. It's nuts.  It was the first thing that I noticed when we purchased the home that we are living in now. I mean, I don't know if the previous owners even attempted to clean the deposits off, that's how hard core they are. So, short of using a chisel to take off the caked on layers (and I'm not about to do that since the fixtures are connected to water), I've been using the following to loosen up what is there and to deter more layers from forming.       

DIY Hard Water Stain Remover 
  • 1 cup of white vinegar
  • 10 drops of lemon essential oils
You want this mixture to soak on the area with hard water deposits.  I like soaking my cleaning rags in this mixture and then draping it over my sink and tub fixtures for a few hours.  This works great on my shower head and clears the gunk right off of it and I get water pressure again.  Amazing!

Copaiba Vitality™

Let's review what it means to be a Vitality™ oil  -  What is the difference between this white labeled Copaiba Vitality™ oil and Copaiba Essential Oil?  

Nothing.  Both contain Copaiba (oleoresin) (Copaifera officinalis) wood oil.

DIY Recipe - Copaiba Tea

1 cup of warm water
1 teaspoon of raw honey
2 drops of Copaiba Vitality™ Essential Oil

Add the 2 drops of Copaiba Vitality™ to your teaspoon of honey and then stir into your mug of warm water.
